A refreshing and healthy salad made with quinoa, chickpeas, and vibrant herbs and lemon dressing.

Ingredients

  • 1 cup quinoa
  • 1 can chickpeas, rinsed and drained
  • 1 cup diced cucumber
  • 1 cup diced tomatoes
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh mint, chopped
  • 1/4 cup olive oil
  • 1/4 cup lemon juice
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Rinse quinoa under cold water. Cook according to package instructions.
  2. In a large bowl, combine cooked quinoa, chickpeas, cucumber, tomatoes, red onion, parsley, and mint.
  3. In a small bowl, whisk together olive oil, lemon juice, salt, and black pepper.
  4. Pour the dressing over the salad and toss gently to combine.
  5. Chill in the refrigerator for at least 30 minutes before serving.

Notes

  • Great for meal prep; it keeps well in the fridge.
  • Add feta cheese for an extra layer of flavor.
