1/4 cup olive oil
1/4 cup lime juice
2 teaspoons chili powder
2 teaspoons cumin
1 teaspoon smoked paprika
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon salt
1/2 teaspoon black pepper
1 tablespoon honey
2 tablespoons chopped fresh cilantro
Instructions
In a medium bowl, whisk together the olive oil, lime juice, chili powder, cumin, smoked paprika, garlic powder, onion powder, salt, black pepper, honey, and cilantro.
Place chicken in a resealable bag or shallow dish and pour marinade over chicken.
Seal the bag or cover the dish, and marinate for at least 1 hour, or overnight for best flavor.
Remove chicken from marinade and cook as desired.
Notes
For a spicier version, add cayenne pepper to the marinade.
Marinating overnight will enhance the flavor significantly.
This marinade works well with beef and shrimp as well.
