Scale

Main ingredients

  • 1 cup Cottage Cheese (Full-fat or low-fat)
  • 2 large Eggs
  • 0.25 teaspoon Garlic Powder
  • 0.5 teaspoon Italian Seasoning

Instructions

  1. Grab your blender or food processor. Toss in your cottage cheese, eggs, garlic powder, and Italian seasoning.
  2. Now, let your appliance work its magic. Blend everything until it’s completely smooth and wonderfully combined. No lumps allowed here!
  3. You have two fantastic options here. Stovetop Method: Heat a non-stick skillet over medium heat. You don’t need much oil, just a tiny bit if your pan isn’t super non-stick.
  4. Oven Method: Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper for easy cleanup.
  5. Stovetop: Pour your batter onto the hot skillet, creating a thin, flatbread-like shape. Cook until the bottom is golden brown and the top looks firm and set. This usually takes about 5-8 minutes per side.
  6. Oven: Pour your batter onto the prepared baking sheet and spread it into a thin layer. Bake for 15-20 minutes, or until it’s golden brown and firm to the touch.

Notes

The flatbread can be made ahead and stored in the refrigerator for up to 3 days. Reheat in a toaster oven, dry skillet, or microwave.
